That’s exactly the same for monzo and MasterCard, it’s the same for all the physical and virtual PoS systems you use. To apply that to Apple but not everything else is just you applying your own broken ideology on it not reality.
If you’d said the same for monzo and MasterCard and POS systems then I could at least see your point as it would make sense.
The task of avoiding Apple and Google is an order of magnatude easier than avoiding say Mastercard or Visa. One involves the slight inconvenience of not paying with your device. The other involves only using cash!
Presumably cash which hasn’t been withdrawn using a Visa or MasterCard, if you want to go the whole hog?
Sounds like an interesting experiment actually! See how long one can last in the UK while completely avoiding the payment networks.
As we’ve already discussed though, Apple doesn’t keep transaction info, neither does MasterCard , it’s the bank that takes and uses that info, so it’s the bank not anyone else that you really need to hide from in this scenario.

I’m not in the habit of trusting the tech giants.
It would be one thing to use Apple Pay or Google Pay in isolation maybe, but in practice doing so involves buying into their ecosystems to some extent. You can’t have either without signing up for an Apple ID or Google Account, running iOS or Google’d Android, etc.
That’s not something I’m happy to do anymore.
More and more I’m using Apple Pay over my physical card, especially after SCA. As the transaction in theory has no limits, and it’s just as quick or quicker… why not.
Still keep two debit cards and a credit card in my wallet though. There’s still plenty of times when I need my card; being abroad, putting one down on the little plate the bill comes with to signal ‘bring the machine over’, but generally going the way of mobile payments these days.
Also I’m generally super conscious one day I’ll end up having no battery on my phone, so it’s always handy having the alternative.
I’d pit Apple Pay and the tokens and the fact they don’t NEED to monetize the data, over the Google ecosphere any day. But that’s just me.
And the evidence/technology involved.
Sure, I’d take Apple over Google most days. But I prefer neither.

Yeah, I hate folks that use mobile payments on the Tube. It is a half step slower than a card for whatever reason. I still think cards are better than using your phone in most cases.
That will disappear once companies start adopting express travel card payments.
