Would be nice if we could save the top-up card/method (i.e. apple pay or direct debit) so we don’t have to carry 2 cards.

This is already a thing. I don’t have to retype all the card details to top-up
There have been problems with this in the past, particularly in relation to the older 3D Secure implementation. I’d recommend mentioning this to Mondo’s support team and asking if they can do anything about it.
