Was considering switching to DD for my sky bill and wondered how secure it is? Surely someone could just put someone else’s sort code and account number and then they’d be out of pocket?

Technically, Sky hold all the power: they can take however much money they want whenever they fancy it.
Legally, you hold all the power: the Direct Debit Guarantee gives you loads of protections, the right to reverse transactions immediately (just ask your bank - you don’t need to get Sky to agree to it), and insists that Sky give you advanced warning of any changes to the payment amount.
The DD Guarantee is so strong that companies are very, very well behaved and DDs are one of the most popular and convenient ways of paying your bills.
