Am I able to change it so I can see the amount I pay for each direct debit, similar to the standing orders?

You will see the amount you paid the last time a direct debit was processed at the bottom of the scheduled payments section. If your direct debit has not yet been processed then it cannot estimate it so it will remain blank.
To change amounts charge contact the provider itself. For example each credit cards, gas, electric etc. usually allow to set amount of direct debits collections on their own respective sites. Which usually get processed with the next bill.
One cannot do this from your bank account. Any one of them. It is only done through the provider itself.
