I think it means the maximum transaction value for a single tap/transaction.

There are both Max and Min value settings, which appear to be independent.
Looks like the feature is accompanied by 2 new buttons too:

Interesting that if you set £0 contactless will be disabled.

Killed two birds with one stone with this feature. Some people have been asking for the option to disable contactless also
