It sounds like the ability to add foreign currency custom transactions to a Shared Tab would solve your issue. You can vote for that feature here:

I was recently on holiday with my partner, in a country that doesn’t have quite the same EMV penetration that the UK does. We managed all our spending through a shared tab, which was really convenient - but often we would need to pay for something in cash. It would have been great to just add the foreign currency amount directly to the shared tab and have Monzo handle the conversion!
