Just like you have live chat support within the app, it would be great to take this to another level and have video & voip support - almost like face-to-face.

What would that add to customer support that isn’t there already?

Peace of mind… be able to speak to an agent straight away and see them and they see you. Many things and above all… the fact i am saying video and video isnt there currently… thereby adding video which isnt currently there.
Text support can sometimes get tedious. It would be fantastic to flip to video and voip chat immediately mid conversation which will help speed up support amd moreover offer something no bank in the world (to the best of my knowledge) is offering - customer centricity!
The storage requirements for historical access might prove somewhat expensive.
Do they record a single stream or video separately at each end and then upload that?
Either way. Gets expensive.

As long as it would be 100% optional for both customers and COps. I detest video calling and avoid voice calls where humanly possible

I think this would be good as an option - would certainly help verify the customer. I would however really only want it as an option - possibly the COPS could require a video call in certain circumstances.
Of course, no one would force anyone to use it. An option if the customer chooses to. For customer service staff - well it would be mandatory support channel if the customer chose to use it. Its no different than serving a customer face to face

You could translate the video chat into text form amd store that after X amount of time
You’d need to be very sure that the transcription was 100% accurate.
I guess you could store the audio only.
Audio works too.
Before getting into the solution I am purely thinking from a support channel perspective. A good option to make life easier for those who wish to use it.

I imagine co-ops would be seeing a lot of this…

I can imagine this could lead to abuse after a few drinks for some people…
