It drives me nuts with foreign transactions why bother rounding up if it doesn’t round up. Argh 
I would like to think that everyone would be fine in having the foreign transaction not rounded until the exact £ is known. Even if that takes a month to collect.

True. but surely the line in the transactions would be able to give you info on it, click through to see the full details?
Are roundups still shown as separate transactions? Plus if I had a round up notification a month later it would look out of place. The current system is preferable imo as it would show clearly the round up was for this transaction at this amount.

Round-ups for me are the same transaction with a little circle in the logo being the pot it rounds-up to. The total transaction is then the cost + the round up

Yes, originally they were. The same effect can be achieved by using the IFTTT round up instead of the inbuilt one.
