Hey, what can I take advantage of with Open Banking with this account? Barclays allow me to aggregate account data, but Monzo & Starling are not on the list.

With banks that do support Monzo for open banking, pretty much that same aggregation stuff!
Freetrade also utilise open banking for depositing which is pretty cool. I don’t necessarily see the advantages in this context over a simple bank transfer though.
Monzo also does aggregation via Monzo Plus, and I think their’s is by far the best implementation of this on the market these days.
