I’ve just noticed Apple Health is in IFTTT but as an Action not a Trigger. I guess this means you can add workouts etc to Apple Health from other services that don’t normally have access to Apple Health. Not sure why Apple health can’t be used as a trigger, that would be great…
Going to have a bash at it tonight, I’ll post my findings - guess that means I have to go for a run tonight too! 
Is that one applet or separate for each Merchant?

Separate for each merchant. I don’t think there’s a way to add multiple merchants to one applet.
Though you can assign different ‘fines’ to different merchants this way. Maybe KFC’s not as bad as Dominos…

I think this is due to health data being encrypted when device is locked so other apps can’t monitor changes unless device is unlocked

I think it depends on the types of bills and if you can work them in conjunction with an overdraft.
OK, so I have managed to get it working! 
There’s a couple of steps involved to get it setup - it’s not just a few clicks but it works and I’m pretty happy with it. 
Rather than clog up the forum with what steps are involved, I’ve written it up on my very new blog if you want to take a look:

It’d be nice if Nike integrated with IFTTT natively one day - it would make things much simpler!
If anyone tries this out too, let me know how you get on.

A sizeable chunk of the posts herein, which explain the logic etc, behind the IFTTT triggers are like a whole new language (bordering in my case, on the unintelligible).

We can’t use categories as triggers just yet. You’d have to make separate applets for each merchant at the moment.
That’s just too dangerous!
