I enjoy the “passive cashback” that Airtime Rewards do, so really I’d likely want to enable every option just in case. It’s fine at the moment as there’s only a handful of retailers I’d use but once the list expands I would rather not need to select anything and for it to track automatically.
Also I don’t know if it got answered yet, what happens if you buy at a retailer that you didn’t select? Do you just miss out or get an alert about enabling for next time?

If i ask for cashback at sainsbury counter with my shopping, how will that work with monzo?

I just wanted to explicitly say @iankent & @ZeenaPatel how great this looks and what a great move it is to see. I know people on here can be quick to fly down the throat of Monzo but this is a superb move.
Not region specific, retailers you can actually use/do use and cashback you get right away. It’s amazing how quickly it can all add up!

Just to confirm - I’ve got the Cashback enabled. If my wife spends on her Joint Account card, it will not track? The Cashback offer is for me, right?

That’s correct - we’re going to improve the experience for joint accounts longer term, but for now it’s only for the cardholder signed up to cashback and the cashback will go into your personal account cashback pot
