It is super annoying!
I use the same shops for lots of different categories, and to have this pop up every single time I am recategorising my transactions is pretty frustrating.
If you could have the option to turn that off, and the old system -whereby it automatically makes uses the selected category going forward until changed again - that would be much better IMO.
